I’m familiar with the culinary uses of papain. Many commercial meat tenderising powders are made with it. The fruit itself also contains papain. I have a recipe I normally make for the Parsee New Year, Bhoojela Gosht, which involves mixing pulped papaya, spices and yogurt, coating a lamb leg in that mix and letting it marinade for 24 hours.
